Happy spring! I hope you had a nice holiday.

The sun is out. Yes! What a great time of year.

Grass, plants, trees, and flowers are starting to grow again. The growing season is just getting started.

While cleaning up and removing clutter from our homes and yards is on many of our to do lists, it’s a great time to clean out our cabinets and refrigerators too! A wider variety of fruits and vegetables are popping up in grocery stores now, and before we know it, farmers’ markets will be opening up. I can’t think of a better time to start replacing processed foods with fresh, farm-to-table foods, one item at a time.

Organic strawberries are already available! They are a favorite in our house, but I’ve also noticed that different kinds of greens are showing up in Whole Foods, as well. Here’s one of my new favorites:

Who can’t resist a salad with a French twist, right? These “mache rosettes” taste like a slice of heaven in your salad bowl, and they’re cleaned three times, which means you can use them right out of the box. Yippee!

The leaves are so cute, too. They almost look like four leave clovers. Here’s one of the salads I prepared with them:

Of course, there’s nothing like freshly picked lettuce from the local organic farm, but for now, I like to combine these with other mixed greens. It’s quick, easy, delicious, and FUN to mix it up.

Here’s some food for thought: this spring, why not commit to eating a daily bowl of greens? No fancy recipe is required. All you have to do is fill the bowl with your favorite leafy greens and veggies. Try to mix it up – cucumbers, olives, avocado, roasted peppers…whatever you like best. Add a splash of olive oil and vinegar (or fresh lemon juice), and voila! There you go. Pair it with some high quality protein, and you have a complete meal.

If salad is not your thing, then try to think of other green vegetables to add to your plate. It’s really an essential color to get into your diet. As the earth gets greener, so should we!

A few words can just about sum it up:

Harvest the sun.

Eat the sun.

Feel the glow, inside and out.

A little side note: I’m a little obsessed with the sun. I used to bathe in it all the time. Well, I can’t do that as much anymore (although we all need a few minutes of daily sun exposure, contrary to popular misinformation), so I’ve decided to eat the sun instead! When we do, we convert its energy into powerful fuel for our cells.
